Anova, which turned over €118 million ($151 million) in 2005, is providing the marketing expertise to the project known as Fishion alongside joint venture partner ZonAquafarming.

Fresh fish weighing between 850 grams and 950 grams and fillets will be aimed at the retail and high-end foodservice markets.

Anova says it hopes to lure consumers with the freshness, shelf life and sustainability of the ice-packed product.

“It’s a niche market, the frozen stuff comes from China, which is something we could never compete with,” Managing Director Constant Mulder told IntraFish.
