The family-owned company started sourcing the ribs from Mar & Terra, a Brazilian aquaculture group which farms tambaqui and other native Brazilian species.

“Wild tambaqui is a protected species, so we decided to buy the farmed product,” Halieutis marketing manger, Beatrice Dary, told IntraFish.

Halieutis launched the ribs in April in the French foodservice sector and is now looking at ways to adapt it for the retail market, Dary said.

The ribs are meant to emulate the consistency of meat and appeal by being easy to prepare -- all that is needed is a couple of minutes in the microwave or grill.
